Caffeine-free Dairy-free Lavender Vanilla Latte MUFFINS! Yes, muffins! These are so so delicious. A nice hint of lavender and vanilla with that café like taste, without the caffeine to cause any negative side effects.
Ingredients
1 ¾ cup gluten free all purpose flour (or regular flour if not gluten sensitive)
1 ½ tbsp ground food grade lavender (I used dried lavender in a coffee grinder)
Add flour, ground lavender, baking soda and salt into a bowl. Whisk to combine and set aside.
In a separate bowl, add dairy-free milk and vanilla nummy. Whisk to combine and set aside.
In a stand mixer or large bowl, add sugar and dairy-free butter. mix to combine.
Add flour mixture, eggs and vanilla nummy mixture and mix until combined. It will be a bit sticky but that is normal.
Scoop mixture into lightly greased muffin pan. Fill 10 cavities approximately ¾ full. They will rise a lot!
Bake on 425F for 5 minutes, then reduce heat to 350F and bake for another 12-17 minutes.
When a toothpick inserted comes out clean and the muffins spring back when touched, you know they are ready!
Allow to cool for 15-20 minutes before removing from muffin pan.
Cut in half and smother with dairy-free butter. Enjoy immediately! Store remaining muffins on the counter for a few days, or in the fridge for up to 1 week.
