Vegan Pumpkin Spice "Coffee" Ice Cream! Seriously, this stuff is unbelievable. It's so easy to make and never lasts more than 5 minutes in my house! This recipe will make you love pumpkin spice even more than you already do (who knew that was possible!) It tastes like pumpkin pie in a delicious scoopable ice cream, but made with healthier ingredients than regular ice cream.

Ingredients

2 cups silk dairy free whipping cream
2/3 cup pumpkin puree
1/4 cup Nummy Pumpkin Spice Instant Herbal Coffee Alternative
1 tsp pure vanilla extract
1 x 250ml can sweetened condensed coconut milk

Directions

Pour 2 cups of dairy free whipping cream into a bowl and mix with a hand mixer until soft peaks form. Set aside.
In a separate bowl, add pumpkin puree and nummy pumpkin spice herbal coffee alternative and whisk until combined.
Add vanilla extract and coconut condensed milk and whip with hand mixer until combined.
Gently fold whipped cream into pumpkin mix, bit by bit, until fully combined.
Pour into loaf pan. Cover with a piece of parchment paper and freeze for 6 hours.
Remove from freezer. Let sit for 10 minutes before serving.
Top with pecans and enjoy!
